Whole-Grain Wheat Bread
6 lbs. White flour
5 lbs. Whole-wheat flour
3 c. brown sugar
5 c. powdered milk
4 Tbsp. salt
3 Tbsp. yeast
Mix dry ingredients together in mixer. In a separate bowl mix together the following:
5 c. warm water
½ c. brown sugar
½ c. yeast
Let stand until yeast begins to work. Add to dry ingredients in mixer. Mix about 30 seconds. Add the following:
2 c. oil
¾ c. molasses
5 c. warm water
Adjust water to achieve dough consistency. Allow dough to double in size. Punch down. Divide dough into 1½ lb. loaves. Bake at 330 for 26 min. Yields 14 loaves.
This dough is also rolled out and with the addition of a sugar cinnamon mix and butter is used to make the cinnamon rolls.
